What valid information do they really need if you just get a coupon to redeem? Maybe a throwaway email address to send you the code or validation for their Rewards Club.
I remember once upon a time ago, when many great deals could be had by doing rebates, people were worried about giving their personal info too, but nothing ever came out of that. So what if the database you're already in, has an entry that suggests you like Chipoltes?
On an interesting side note, some state DMVs now apparently sell their vehicle registration info, so conceivably if your state does this, then any place with smart cameras that's tied into that, can track where you go and when... but so can google and apple if your phone is on. :)
